Pork chop with mushrooms and shallots in a dijon herb sauce, 1/2 c. parmesan and roasted garlic mashed red potatoes and 1/2 c. Trader Joe's fire roasted veggies in balsamic butter sauce. The veggies were good but I won't make them with this meal again; I don't know what I was thinking doing two sauces on one plate! The sauce from the veggies took over my plate and it wasn't pretty. (Yummy, but still...)
Dessert (5 pts)
74 g Market Pantry reduced fat chocolate chip ice cream
Ok, I better get to my kiddos! They're sick and I don't know why they're fighting sleep so hard! I need my rest too since tomorrow will be a busy day. Good night all!
