So yesterday was a nightmare! We had a power outage that affected as far north as the OC and as far south as Rosarito, BC, Mexico. We didn't have power from 3:40 in the afternoon until 1:24 this morning. I was standing in my kitchen happily baking homemade individual graham cracker crusts for a pumpkin dessert experiment in my nice air conditioning when it suddenly went off. Of course I Facebooked about it, as soon as my phone let me, and was surprised to learn of how widespread the outage was. It was a bit unnerving, but I felt reassured once I learned L.A. and Riverside counties still had power.
It was quite an adventure. My kids weren't fans since they're so spoiled and used to air conditioning, and light. We did have two lamps going for a couple of hours because my hubby ran some extension cords from the power generator he has in his work truck, but it wasn't much, and at once point we plugged in the tv for some news. It was crazy seeing helicopter footage over a black San Diego. The two small lamps were in the living and dining areas, so I had to cook dinner by candlelight and a flashlight. My healthy dinner plans were spoiled by lack of power for the Foreman grill, and I had to make some changes. I steamed my zucchini & squash instead of roasting them, and instead of a yummy cornbread stuffing we had plain cornbread defrosted from the deep freezer. I took pics but they're just awful. Because of my slight change in plans dinner ended up costing more points than anticipated, which I learned this morning when I had Internet again and tracked it. I managed to get myself 3 Pt+ into the red, meaning I used up all of my weekly points, all of my activity points and 3 more. Booooo. But it's ok, we were in survival mode last night, haha. ;)
This was my menu yesterday:
Breakfast (12 pts)
Another ABC egg white omelet and my lattes.
Snack (0 pts)
Organic strawberries and fat free Reddi-Wip for dipping
Lunch (8 pts)
Leftover grilled chicken bruschetta over 1 oz of thin whole wheat spaghetti. I ate it cold and it was just as delicious!
Candlelight dinner (14 pts)
Jack Daniels Honey Dijon pork cutlet with apple-onion topping (pan fried instead of grilled, boooo), a low fat cornbread muffin thawed from a ziploc bag in the deep freezer, steamed zucchini and yellow squash and a Diet Shasta Root Beer.
Candlelight dessert (6 pts)
No-bake pumpkin cheesecake experiment in a half-baked graham cracker crust. (The crust was a nontraditional one so I didn't hesitate to eat it later.) The cheesecake part wasn't quite set because it never got cold enough, but at least it was still yummy. It's good to know that I got the flavors right at least.
After we had dinner we stopped running the power from the truck and used some candles, which was scary because our toddler wanted to to try to climb up and get them. For peace of mind we blew them out and used flashlights. It was hot and humid in the house, especially after I cooked, so we took advantage of the cooler air outside and took the kids for a little walk in our neighborhood. Most of our neighbors were walking around too. Our toddler was stoked to see all of the "shining stars"; we have so much light pollution out here that he's never seen the sky like that before. It was kinda cool. The downside to this outage is that I just went grocery shopping Tuesday and have to toss a lot of our brand new food. That hurts. So the kids and I have to go out and re-purchase stuff in a little bit. Yayyyy. I'll be back later with a post about what I ate today. Thanks for reading!
