First Official Day of Fall Friday 9-23-11

Today has been a busy Friday, not the relaxing first day of fall that I had envisioned, but it was still good.  I woke up, made us all breakfast and then did some very light cleaning.  During my son's lunch I decided I was going to make that homemade marinara that I love (the one that takes over an hour to make.) While I was gathering all of my ingredients my hubby called and told me our realtor wanted to show the house in less than an hour. I was freaked out (and relieved I hadn't started the sauce yet) and got to cleaning as fast as possible.  Of course about 15 minutes before the realtor was set to arrive my son thought it would be fun to run up to his bowl of leftover apricot chicken and couscous and dump it allover the floor. I had to clean him up and try to clean up his mess, and as I was doing that the realtor and the potential buyer showed up 10 minutes early.  Needless to say I didn't get everything done that I wanted to get done.  I got out of here as quickly as I could with the kids and we took a 30 minute walk around our neighborhood.  When we got back I cleaned some more and made my marinara sauce, plus some homemade chicken nuggets, put the kids down for naps, ate lunch, cleaned up, worked out, showered, cleaned up some more and then made dinner (which was quick since I used leftover chicken from Wednesday night's dinner.)  After dinner I got to relax some and watched a movie with the hubs.  We got "Taken" from Netflix.  It was little over the top, but I still liked it.  I still have to clean the kitchen from dinner and I'm not looking forward to it.  Anyway, here was what my first day of fall looked liked, food-wise:

Breakfast (12 pts)
ABC omelet (2 oz of avocado, 2 strips center cut bacon crumbled into 1/2 c. egg whites, 1/4 c. reduced fat cheddar, homemade salsa and a dollop of light sour cream) and a skinny pumpkin spiced latte

Lunch (11 pts)
6 oz serving of homemade healthy baked parmesan chicken nuggets, 1/2 c. chunky homemade marinara for dipping (Scalini's recipe, only lightened up), mixed organic baby greens tossed with 1 Tbsp Caesar dressing and topped with 1/4 oz shaved parmesan cheese and a Diet Root Beer.

Dinner (13 pts)
2 creamy chicken enchiladas verdes with light sour cream and green onions, 1/2 c. refried beans with a sprinkle of reduced fat Mexican cheese blend, and a lightened up frozen strawberry-limeade.

I ended up having to use 3 weekly points for dinner, but that's fine because it's already Friday and I'm still in pretty good shape for the weekend. It's almost 9 p.m and I'm still quite full from dinner, so dessert is highly unlikely.  Thanks for reading.  That's all folks!
