Wednesday 8-31-11
I kept myself super busy today, so I never got a chance to eat any snacks. I scheduled a pick-up with Amvets for this Friday and I am trying to get rid of a lot of stuff, stuff that should have been gone years ago. I am such a terrible pack rat. I found some pretty ridiculous stuff hiding in some of my dresser drawers. I also spent a good chunk of my day ripping out old, ugly wallpaper in our master bathroom. And I also did aerobics and lifted weights. All in all, a very productive day! Food-wise, this is how my day looked:
Breakfast (10)
My lightened up version of Jack-in-the-Box's Ultimate Breakfast Sandwich (made with a Sara Lee whole wheat white bun, center cut bacon, 1/3 c. egg whites, 4 slices Hormel natural choice smoked ham and a 2% American cheese single.) A very huge serving of sliced organic strawberries, blueberries and raspberries topped with a dollop of fat free Reddi-Wip. 2 lattes, each made with 1/2 c. organic skim milk, 1/2 Tbsp sugar free hazelnut powder creamer and Splenda.
Lunch (9 pts)
Huge bowl of albondigas soup, which I cooked yesterday. It's a spicy Mexican meatball soup. I lightened up my mom's recipe by using extremely lean meat and brown rice instead of white. I also added a ton more veggies so it had a hearty stew-like consistency. SO good and SO filling!
Snack (0 pts)
Oops, I forgot to have a snack!
Dinner (10 pts)
Chicken Marsala, low fat garlic mashed potatoes and garlic roasted asparagus.
Dessert (7 pts)
Reduced-guilt fat free brownie (using Trader Joe's mix and 0% Greek vanilla yogurt) spread with 1 tsp of Nutella and topped with 5 g toasted hazelnuts. And 1 c. of organic skim milk to wash it down.
Once again I used exactly 36 of my 36 points. I'm super motivated to reach my mini-goal of hitting the 120's by Saturday morning, and I'll hopefully have a good loss on my official weigh-in day Monday. It would be awesome to be at a low enough weight to go to a meeting and reclaim my status as a Weight Watchers lifetime member in good standing. We shall see. Goodnight all!
