Today was pretty low key. I was busy, but I took my time with everything unlike yesterday. I did laundry, cleaned, made two kinds of salsa, cooked a big pot of albondigas soup to be enjoyed at another time (because it tastes WAY better as leftovers in my opinion), went to the bank, went to Sprouts, and took some breaks to play with the kiddos of course. We also watched Peter Pan together while I folded laundry. Oh, and I squeezed in a "30 Day Shred" session while my albondigas were simmering and the kids were napping. That is probably my favorite, most efficient workout dvd for days I don't have time for a long workout. I love Jillian Michaels! Anyway, this is what my menu looked like today. It was a good one:
Breakfast (9 pts)
Egg white scramble with 1/2 c. egg whites, chopped onions, tri-color peppers, mushrooms, sliced zucchini, yellow squash, organic baby spinach and tomatoes topped with Sargento reduced fat pepper jack cheese and homemade salsa. 2 slices center-cut bacon. 1 slice of Sara Lee Delightful 100% whole wheat toast spread with 1 tsp Smart Balance Light with flax. 2 lattes, each made with 1/2 c. organic skim milk, 1/2 Tbsp sugar free hazelnut powder creamer and Splenda.
Snack (0 pts)
1 organic peach
Lunch (9 pts)
Big fat animal-style burger salad made with 3 c. chopped organic romaine lettuce, 1/2 c. chopped, sauteed onions, sliced organic cherry tomatoes, coarsely chopped dill pickle slices, 1/4 c. shredded natural 2% Mexican blend cheese, 4 oz (weight before cooking) extra lean, perfectly seasoned organic grass-fed beef burger broken up, and 1 packet of In-N-Out spread for the salad dressing. (YES! The yummy spread comes in packets now! Weeee!) Chocolate cherry bomb green monster smoothie made with 1 frozen banana + frozen sweet pitted cherries + 2 c. organic baby spinach + 1 c. light chocolate soy milk in the blender.

One teeny sip of the albondigas broth to ensure that I seasoned it properly. (I did.)
Dinner (14 pts)
2 Baja style fish tacos with tri-color crema slaw, lime and homemade pico de gallo, 1/4 c. black beans topped with fresh pico de gallo, 1/4 c. homemade guacamole and 1 oz of Baked! Tostitos scoops. 12 oz can Diet Shasta Root Beer. The original plan was to have organic virgin strawberry-mango margaritas, but I neglected to freeze strawberries and I never like to water down frozen drinks with ice! So Root Beer it was, oh well.
Dessert (4 pts)
1 slice of sugar free lemon creme cake topped with 1/4 c. fat free raspberry sherbert.
I used exactly 36 of my 36 points today and am very satisfied indeed. What a delicious day I had! But I am running behind. I still have dinner dishes to wash and kids to bathe, so off I go. Have a great night everyone, and thanks for reading!
Your dishes always look so appetizing! How many pts. will your daily allowance drop to after you stop nursing? 36 is a lot!

ReplyDeleteYes, I had said 29, but now that I think about it, it depends. If she weans herself before I hit my ultimate weight goal (doubtful) then I will drop to 29 points. (29 points is the lowest daily points allowance possible in PointsPlus.) However if she is still nursing when I reach my goal and enter maintenance mode my points allowance will actually go UP (score!) Of course my target will drop no matter when she weans, but if she does it when I'm in maintenance it'll probably just "drop" to the target I'm at currently, which is fine by me. :)
