Thursday 9-29-11

I can't believe I'm just now posting at almost midnight.  I lost track of time.  I have been working on my baby girl's Nightmare Before Christmas birthday party during every second of my spare time.  I went into panic mode this morning when I realized it's only 9 days away, and I still have so much to do!  I ate quick easy things today.  When it was 6:45 and I was in the middle of her photo collage my hubby said "should I just order some pizza?" and I said "Yup."  So he did.  Yikes, I am all out of weekly points now, and a bit in the red.  I have been in a bad place food-wise the past couple days and I need to snap out of it. Gaaaah! Ok, so here is what I ate today:

Breakfast (9 pts)
Egg whites, bacon, Everything bagel thin with neufchatel and 2 skim lattes with fat free cinnamon vanilla creamer.

Lunch (12 pts)
Stacked ham & cheese sandwich with delightful bread, 2 1/2 oz ham, light pepper jack, light mayo, mustard and lettuce, and 1 oz of Baked Tostitos Scoops with cream cheese salsa dip.

Dinner from Domino's again (29 pts!)
3 slices of large hand-tossed pepperoni pizza and 3 pieces of boneless chicken with Kicker Hot Sauce dip.

50 pts total, ouch.  Ok, baby girl just started crying.  I better go investigate.  Good night all!

Tuesday 9-27-11

Today was a little stressful.  I had to get the house ready for a showing in under 10 minutes and that was not pleasant for me with two messy kids, especially since all three of us were eating when I got the phone call.  After that it was errand running for baby girl's upcoming birthday party.  We had to pick up some things, get my son's hair cut, drop my Nightmare Before Christmas cake toppers off at the bakery (where my son and I tasted some cake) and then did more shopping.  We didn't get home til 6 p.m-ish, and I still had more cleaning to do (because we have an 8:45 a.m. showing with realtors tomorrow!)  I also worked on some homemade Nightmare decorations and sketched out last second ideas.  I didn't end up making dinner after all because I was too busy and because I didn't want to dirty the kitchen, so we ordered Domino's again.  Yup, I dipped into weeklies, again.  Here's what I ate today:

Breakfast (10 pts)
Egg whites, center cut bacon, an Everything bagel thin with neufchatel and 2 organic skim milk/fat free cinnamon vanilla creamer

Lunch (7 pts)
Leftover pork cutlet with apple-onion topping and a cup of honey roasted butternut squash

Snack at Cute Cakes of San Diego (9 pts-ish, hopefully an overestimation)
1 "deep south chocolate" cupcake with chocolate ganache, a tiny bite of vanilla cake and a tiny bite of lemon cake

Dinner (18 pts)
1/4 of a large thin crust Domino's pepperoni pizza, a big organic salad with 1 Tbsp ranch, 4 pieces of Domino's boneless chicken with Kicker hot sauce, and a Diet Shasta Root Beer.

Snack (3 pts)
1 bread stick dipped in Domino's marinara

I used 47/36 pts.  It sounds high but it's not too bad considering we had a pizza night. It could have been much worse!  Goodnight, I still have lots to do before bed!

Monday 9-26-11

Man oh man, what a long day.  Please forgive me if this is incoherent.  I am half asleep.  I was really thrilled when at 8 p.m. my entire family was in bed sound asleep.  I thought "yay, I can blog in silence and relax for a little bit and go to sleep before 9."  Of course my Internet stopped working and as I was trouble shooting my 11 month old woke up very playful.  I let her crawl around for a few minutes while I restarted my computer and then my two year old came walking out and said "Good morning mommy!"  He was in his crib, asleep.  He fell asleep halfway through bedtime story #2 and I snuck out.  He has a toddler bed but we decided to keep him in the crib as long as possible, but I guess he can climb out now so...that sucks.  He has never climbed out before.  Ohhh this is going to be a long night, I can tell.  Let the wild rumpus start!  On the bright side, I am officially a lifetime member again!  I had a decent weigh in this morning and am .6 of a lb under my WW goal, woot!  But I'd still like to lose 3.4 lbs to be at my pre-pregnancy weight.  I updated my Weight Watcher story page and everything.  Well, I better get on to my menu.  I have two little wild things demanding  my attention.  This is what I ate today:

Breakfast (11 pts)
Ham, cheese and egg whites on a Pillsbury Grands buttermilk biscuit with two organic skim milk/sugar free hazelnut lattes.

Lunch (12 pts)
4 oz leftover slow-cooked turkey with 1 Tbsp whole berry cranberry sauce, 1/4 c. garlic mashed potatoes with turkey gravy, 1 c. steamed broccoli/carrots/cauilflower, half of a buttermilk biscuit with I Can't Believe It's Not Butter spray and honey, 1/2 c. honey roasted butternut squash and a Diet Shasta Root Beer.

Dinner (10 pts)
Grilled pork cutlet with apple-onion topping, 3/4 serving of cornbread stuffing and 1 c. honey roasted butternut squash leftover from lunch.

Dessert (8 pts)
1 slice of low fat raspberry swirl cheesecake

I really wanted dessert tonight even though I only had 3 pts left, so I used 5 weekly points to have my cheesecake.  It was totally worth it.  Good night all.

Sunday 9-25-11

Oh my goodness, I am so full, like Thanksgiving full.  We had my sister's family over for the Charger game (YEAH CHARGERS!) and then we all had dinner together, so we had company pretty much the whole day. It sort of felt like Thanksgiving day since I had the turkey cooking all day in the crock pot and we had football on most of the time.  It was really nice.  I love having company and we all had a really great time.  I spent a majority of my time in the kitchen, but I like that.  I love feeling all domestic.  Anyway, this is what I ate today.  It was a lot of food and I am still so full:

Breakfast (11 pts)
1/2 c. egg whites, 2 slices of center cut bacon (a different brand so 1 pt more, boo), a cinnamon raisin bagel thin with 2 Tbsp pumpkin spice cream cheese and 2 skim milk/sugar free hazelnut lattes.

Snack (5 pts) 
1/2 c. skinny buffalo chicken dip with celery sticks and then 1/2 oz of regular tortilla chips (not pictured) to finish off what dip I had left after the celery was gone.

Lunch (4 pts)
2 Delimex chicken taquitos with spicy avocado dip

Dinner (20 pts)
4 oz of slow-cooker turkey tenderloins with 1 Tbsp cranberry sauce, 1/4 c. cornbread stuffing, 1/2 c. garlic mashed potatoes with turkey gravy, steamed veggies, a jumbo flaky buttermilk biscuit with Smart Balance Light and 1 tsp honey, and a Diet Shasta Root Beer.

Dessert (10 pts)
A slice of low fat raspberry swirl cheesecake with a glass of organic skim milk

I used 50 pts today!  I weigh in tomorrow and still have weekly points to spare, plus all of my activity points so I am not too worried.  It was worth it.  Good night all!

Saturday 9-24-11

We had a really nice day.  My grandma is down from Mexico and I got to see her for the first time in 7 months or so.  My family and my sister's family went to my parents' to have dinner with her.  It was a good time.  Sorry for the quick post but I'm super tired and hubby is pacing back and forth waiting to use the comp after me so I'll just get to my menu.  This is what I ate today:

Breakfast (10 pts)
2 slices of Delightful pumpkin spice french toast with 2 Tbsp homemade pumpkin butter, 1/4 c. egg whites, 2 turkey sausage links and a pumpkin spice latte. Yay autumn!

Lunch (9 pts)
1 oz whole grain thin spaghetti topped with 1/2 c. homemade marinara, 3 oz of homemade healthy parmesan chicken nuggets and 1 oz of melted 2% mozzarella cheese and a Diet Root Beer. 

Dinner (12 pts-ish)
A bowl of my mom's albondigas soup plus another ladle full a little while later. This may be an overestimation, points-wise.  My recipe is 8 pts for a huge bowl and I ate about the same amount of my mom's, but I added a few points just to be safe since I don't know how much oil my mom used, how much rice, etc. 

Dessert (9 pts)
A 3 oz slice of old-fashioned buttermilk cinnamon streussel cake. 

I used 40 pts today of my 36, so 4 weeklies.  I'm fighting some powerful urges to have a snack though, so we'll see how the rest of the night goes.  Good night all!

First Official Day of Fall Friday 9-23-11

Today has been a busy Friday, not the relaxing first day of fall that I had envisioned, but it was still good.  I woke up, made us all breakfast and then did some very light cleaning.  During my son's lunch I decided I was going to make that homemade marinara that I love (the one that takes over an hour to make.) While I was gathering all of my ingredients my hubby called and told me our realtor wanted to show the house in less than an hour. I was freaked out (and relieved I hadn't started the sauce yet) and got to cleaning as fast as possible.  Of course about 15 minutes before the realtor was set to arrive my son thought it would be fun to run up to his bowl of leftover apricot chicken and couscous and dump it allover the floor. I had to clean him up and try to clean up his mess, and as I was doing that the realtor and the potential buyer showed up 10 minutes early.  Needless to say I didn't get everything done that I wanted to get done.  I got out of here as quickly as I could with the kids and we took a 30 minute walk around our neighborhood.  When we got back I cleaned some more and made my marinara sauce, plus some homemade chicken nuggets, put the kids down for naps, ate lunch, cleaned up, worked out, showered, cleaned up some more and then made dinner (which was quick since I used leftover chicken from Wednesday night's dinner.)  After dinner I got to relax some and watched a movie with the hubs.  We got "Taken" from Netflix.  It was little over the top, but I still liked it.  I still have to clean the kitchen from dinner and I'm not looking forward to it.  Anyway, here was what my first day of fall looked liked, food-wise:

Breakfast (12 pts)
ABC omelet (2 oz of avocado, 2 strips center cut bacon crumbled into 1/2 c. egg whites, 1/4 c. reduced fat cheddar, homemade salsa and a dollop of light sour cream) and a skinny pumpkin spiced latte

Lunch (11 pts)
6 oz serving of homemade healthy baked parmesan chicken nuggets, 1/2 c. chunky homemade marinara for dipping (Scalini's recipe, only lightened up), mixed organic baby greens tossed with 1 Tbsp Caesar dressing and topped with 1/4 oz shaved parmesan cheese and a Diet Root Beer.

Dinner (13 pts)
2 creamy chicken enchiladas verdes with light sour cream and green onions, 1/2 c. refried beans with a sprinkle of reduced fat Mexican cheese blend, and a lightened up frozen strawberry-limeade.

I ended up having to use 3 weekly points for dinner, but that's fine because it's already Friday and I'm still in pretty good shape for the weekend. It's almost 9 p.m and I'm still quite full from dinner, so dessert is highly unlikely.  Thanks for reading.  That's all folks!

Thursday 9-22-11

Today was another day spent mostly in the kitchen prepping and cooking a lot of butternut squash and pumpkin, making baby food, and then doing all of my food prep for dinner ahead of time.  Aside from a mall walk with the kids I never got around to working out.  I'm pretty exhausted anyway.  I've been going to bed way too late and it's affecting my cognitive function in a major way, so after this it will be an early bed time for me. I'm probably not even going to eat my last point of the day.  We'll see.  As it stands I had 35 of my 36 points.  This is what I had today:

Breakfast (9 pts)
Light ham, egg white & cheese breakfast sandwich on Sara Lee Delightful wheat toast and 1 large skinny pumpkin spiced latte (divided into two mugs so I felt like I was having two.)

Lunch (6 pts)
Baby spinach salad with honey roasted butternut squash, pumpkin seeds, gorgonzola and dried cherries. I found this idea on the Skinny Taste blog, but I modified it slightly, accidentally lowering the points. Score! (I also did NOT use the WW recipe builder function so that may have affected things too. I'm a nursing mama, so it's ok!)


Snack (0 pts)
A banana

This was a very tasty Pampered Chef recipe! LOVED it!
Dinner (20 pts)
Moroccan-spiced Apricot chicken over Israeli couscous (with dried apricots and cilantro) and 85 g Trader Joe's garlic naan with 1 tsp Smart Balance Light buttery spread.

Hmm...I know I said I wasn't going to eat my last WW point of the night, but my tummy is suddenly growling at me, so I'm going to go ahead and grab a light string cheese before I head off into dream land.  So...

Wednesday 9-21-11

Sorry for the really late post!  Today was kind of crazy with errand running, the kids and cooking and prepping. I got a lot done and I went to two grocery stores.  By the time I was done with everything I still had a whole chicken to cook, which takes forever, so I decided to use my Pampered Chef deep dish baker to do most of the work in the microwave and then finished it off in the oven so it could still get golden and crispy on the outside but not take 3 hours.  It worked well.  The chicken was still moist and delicious but it took a fraction of the time that roasting strictly in the oven normally would.  I love my deep dish baker, and I love my new recipe.  I made a paste of garlic, salt, pepper, fresh rosemary & thyme which I rubbed allover the chicken under its skin. Then I sliced lemons and put those under the skin too.  I added quartered baby red potatoes and onions to the baker, spritzed everything with olive oil, sprinkled it with fresh ground salt/pepper and garlic powder, more lemons and thyme.  It was another experiment that went better than expected.  I also squeezed in a workout while the chicken & potatoes were crisping up in the oven.  After dinner I spent all night in the kitchen cooking, prepping and cleaning up.  (I'm still not finished cleaning up, but I needed to take a break to write this blog.)  I made a whole batch of pumpkin spice cream cheese and a big jar of pumpkin butter, among other things.  My house smells delightful right now!  This is what my menu looked like today:

Breakfast (10 pts)
1/2 c. egg whites, 2 turkey sausage links, a Thomas' Everything Bagel thin + 1 Tbsp neufchatel and 2 skim milk/sugar free hazelnut lattes

Snack (0 pts)
A banana

Leftover eggplant parmigiana (reheated from the deep freezer)

Cucumber slices

This fed my whole family with tons of leftovers for other stuff, yay!
Dinner (14 pts)
4 oz of "Short-on-thyme" (har har) garlic, lemon & herb roasted chicken with baby red potatoes & onions (breast meat only, skin removed), roasted asparagus and 5 fl oz of "two-buck-Chuck" chardonnay (not pictured.)

Dessert (3 pts)
2 slices of Sara Lee Delightful whole wheat toast + 2 Tbsp of homemade Skinny pumpkin butter

I used 36 out of 36 pts today and earned some APs (activity points) too.  All in all a very good (but busy) day.  I need to finish cleaning my kitchen so I can finally get some sleep. Good night all!

Tuesday 9-20-11

Today was one of those days where I just never quite woke up.  It's kind of a blur.  (My kids took turns waking me up last night.  It was great fun.)  I also feel like I might be coming down with something.  I'm just...off and my throat is slightly sore.  I had the best intentions today but it ended with an unplanned splurge.  I made myself work out today while the kids napped and used up the last of my 36 points with dinner.  I planned to have 0 point fruit for dessert during my Gleek fest (yay, Glee is back!)  The hubby asked me to bake something and after some hesitation I ultimately decided it would be ok to use a few weekly points on this very special night. I couldn't think of anything quick enough to bake before Glee started and then I remembered my mom's 3-ingredient peanut butter cookie recipe (which I usually lighten up with Splenda and egg sub) and I also remembered the sugar free Reese's Peanut Butter cups I bought the other day.  Without first calculating what the points+ would be (because I was in a hurry to have them done before Glee started) I went ahead and baked a low carb version of a friend's mom's peanut butter cup cookie recipe, and hubby fell asleep so I was alone with them!  I ended up eating 3 of them with milk....and then during a commercial break I had another one, ugh!  After Glee was over I hopped on my computer to use WW's "recipe builder" tool and was horrified to find that despite my efforts to lighten them up the cookies were still a whopping 4 pts+ each.  Oh well, at least I had the weekly points for them and at least I've worked out twice in a row. Lesson learned! So this was my menu today:

Breakfast (14 pts)
Nutty chocolate cranberry oatmeal (1/2 c. old fashioned rolled oats + 1 c. organic skim milk + 15 g mini chocolate chips + 1 packet Splenda + 20 g dried cranberries + 8 g sliced almonds) and my usual skim milk/sugar free hazelnut lattes

1 1/2 c. strawberries + 5 g fat free Reddi-Wip for dipping them in

Lunch (9 pts)
Low fat chicken & veggie pot pie

Post workout snack (4 pts)
1 slice Sara Lee Delightful whole wheat bread + 1/2 Tbsp reduced fat crunchy peanut butter + 1/2 Tbsp strawberry preserves and a .5 oz bag of mini pretzels

Dinner (10 pts)
4 oz blackened tilapia with lemon, 1/2 c. herbed long grain & wild rice pilaf and organic baby greens topped with 1 Tbsp spicy Ranch dressing

Dessert (18 pts...ouch.)
4 reduced carb peanut butter cup cookies and a glass of organic skim milk

Now I am chugging lots of water and regretting my decision to bake something after I had already decided my only dessert for the night would be fruit.  Yes, they were super delicious, but my goodness, not sure they were worth 18 pts---half of my daily points target!  I should have known.  I'm never to be trusted alone with peanut butter.  It's one of my trigger foods and I know that.  What was I thinking?!  I'm trying to move on and not dwell on this but I'm having a major "duh" moment.  I guess there will be no skipping workouts for me this week!  I better get going.  Thanks for reading my little vent.  Goodnight folks!

Mellow Monday Menu 9-19-11

Today was a really great, super relaxing day.  Although I had a long list of things I wanted to accomplish today I decided to slow down for a change and enjoy the day with my kids.  They were awesome and let me sleep in until 9:30 and then we had a leisurely breakfast and watched "Tangled" together.  We did do some grocery shopping and I planned my dinners for the week, but it wasn't rushed at all.  Then my hubby got off work at a decent time so I was able to go to the gym (finally!)  It had been far too long since I set foot in my gym.  That was great.  OH YEAH!  And one of the best parts of all: weigh in went a lot better than I expected.  I managed to lose more than 2 lbs and have officially hit my lowest weight in two years, 128.3 lbs, which is just .3 over my WW goal weight on paper.  Woo-hoo!  That was rather surprising.  My thought is that maybe I overestimated points+ values on some of the take out I had over the weekend and really didn't go into the red after all.  I'm not sure what happened there, but I'll take it!  Anyway, this was what I ate today:

Breakfast (8 pts)
1/2 c. egg whites, 2 slices center cut bacon, 2 slices of Sara Lee Delightful whole wheat toast with Smart Balance Light and a sprinkle of cinnamon-sugar and two skim milk/sugar free hazelnut lattes with Splenda.

Snack (0 pts)
A bowl of watermelon chunks

Lunch (13 pts)
A California burrito made with 2 oz leftover carne asada, 3 oz potato/onions cooked in canola oil, cheddar cheese, homemade salsa and light sour cream in a flour tortilla.

Dinner (9 pts)
A low fat chicken pot pie made with boiled chicken breast tenders, 98% fat free condensed soup, chicken boullion, herbs & spices, pearl onions, new potatoes, carrots, celery, corn, green beans, peas and grocery store brand refrigerated buttermilk biscuits rolled out on top of 16 oz casserole dishes. Very easy and very yummy...and there's still a ton of soup left to make pot pies for lunch tomorrow.

Dessert (6 pts)
Smart Ones Peanut Butter Cup sundae and a glass of organic skim milk.

Sunday 9-18-11

Today did not go as planned, but I did get a lot done so I am happy with it.  I didn't end up cooking dinner like I planned, but I did stay within my points so that's ok too. This is is what I ate today:

1/2 c. egg whites, 2 slices center cut bacon, 2 slices Sara Lee Delightful wheat toast with Smart Balance Light and sugar free raspberry preserves, and 2 organic skim milk/sugar free hazelnut lattes.

Lunch (10 pts)
Turkey & reduced fat pepper jack wrap in a whole wheat tortilla with organic salad and spicy Ranch and 1 oz of Hawaiian kettle chips on the side.

Snack (0 pts)

Dinner (10 pts)
California burrito with 2 oz carne asada, potatoes and onions cooked in oil, cheddar cheese, light sour cream and a whole wheat tortilla.

Dessert (8 pts)
A slice of no bake pumpkin spice cheesecake, and it's officially all gone now.

Saturday 9-17-11

Ohh man...what a gnarly day.  It started well enough, then got crazy and ended up with me going into the red again (points-wise.)  The hubs and I checked out some properties on our way to Costco and were out longer than we planned to be. By the time we got home from Costco I was starving (because without realizing it I went 7 1/2 hours without eating, a huge mistake for me), so I made some dumb choices like sharing a pb&j with my son because it was quick & easy and then finishing off his leftover chicken quesadilla from last night. Then we went to a boxing match/bbq at my parents'. They were great and made some chicken breast so I could avoid carne asada, and everything was ok points-wise. I even had points leftover to enjoy some of the pumpkin bread with cream cheese icing I baked for the occasion.  Then an uncle of mine showed up with Papa John's pizza, which I haven't had in a loooong time.  I did well staying away for a while, til my son wanted some.  He eats everything but the crust, and I hate wasted food so I ate his crust.  But that was such a tease and I ended up getting a full slice of my own, and then another.  Why I do this to myself I will never know.  I have been having way too many slip-ups like this in the last couple weeks.  The trick is to move on and learn from it rather than dwell, so that's what I'm going to try to do. Gaaah...this was what today looked like:

Breakfast (8 pts)
1 slice "Delightful" pumpkin spice french toast with Smart Balance Light and 1 tsp Aunt Jemima Butter Lite syrup, 1/4 c.egg whites, 2 turkey sausage links and 2 skim milk/sugar free hazelnut lattes.

Snack (3 pts-ish?)
A few Costco samples. 1 piece of orange chicken, half a sip of berry yogurt smoothie and 2 Artisan tortilla chips

Lunch (20 pts? I had to guess at the Albertaco's quesadilla)
1/4 of my son's pb&j (made with Sara Lee Delightful bread) and what was left of his chicken quesadilla from yesterday. When I looked up "chicken quesadilla" on WW online I found points values all across the board, so to be safe I went with one of the highest values.

Dinner (12 pts)
3 oz grilled chicken breast, 1/2 c. rice, 1/2 c. beans, 2 corn tortillas and Diet Sunkist.

Dessert (5 pts)
1 slice of pumpkin bread with cream cheese glaze

Well, at least I know we're staying home tomorrow to work on the house so I shouldn't be anywhere near temptations, and I have thawed chicken breasts in the fridge so I WILL cook something healthy tomorrow evening.  Monday I am going to stop neglecting my body and I WILL exercise, no matter what I have going on, even if I have to wake up extra early to do it.  This not working out thing is just not working out for me.  I've been making too many excuses lately and it's got to stop.  Ok, rant over.  Tomorrow is a new day.  Goodnight folks!

Friday 9-16-11

Oh my goodness, I didn't realize how late it is.  I had a late dinner because I got really busy at the end of the day and lost track of time.  In addition my chicken wasn't thawed yet, nor was my tilapia, so we ended up buying food for dinner after I did some shopping.  I dipped into weeklies big time, but I still have 17 left for Saturday & Sunday should I need them. This was my menu today:

Breakfast (7 pts)
The last 2 oz of my shredded verde pork mixed with egg whites & onions in a whole wheat tortilla, and a grande coffee from Starbucks with 1 Tbsp sugar free hazelnut creamer and some Splenda.

Lunch (8 pts)
Leftover chicken tortilla soup with avocados, baked Tostitos, reduced fat pepper jack and cilantro.

Yup, ate it straight out of the styrofoam container. Classy, huh? ;)
Dinner from Albertacos (approx 32 pts...though I hope that's an overestimation!)

Thursday 9-15-11

Today was busy, but I didn't leave the house at all so it wasn't as crazy as it could have been.  The kids and housework kept me busy enough.  I'm pretty tired and there's not a lot going on so I'll just get to my menu for the day. Here's what I ate today:

Breakfast (12 pts)
4 oz leftover chile verde pork sauteed in 1 tsp canola oil with onions, chiles and egg whites rolled into a warm flour tortilla. It might sound weird but it was a lot like a machaca burrito and was super delicious. Instead of my usual 2 skim milk/hazelnut lattes I had Mexican hot chocolate inspired ones. 1 c. hot skim milk mixed with a packet of Diet Swiss, vanilla extract, ground cinnamon, Splenda, a tiny bit of nutmeg and coffee. It was a nice change.

Lunch (10 pts)
Leftover eggplant parmigiana, 1 piece of ghetto garlic bread and a Diet Shasta Root Beer.

Dinner (8 pts)
A large bowl of chicken tortilla soup with 10 kinds of veggies plus diced potatoes, reduced fat pepper jack cheese, 2 oz of sliced avocado, cilantro, lime and 1/2 oz broken up Baked Tostitos scoops.

Dessert (12 pts)
A slice (and then another half of a slice) of no bake pumpkin spice cheesecake. Yum yum yum, and kinda dangerous to have in the house. Next time I make this it'll be when we have company so I'm not tempted to have seconds!

I ate 42 points of 36 because I had more dessert than I should have, but that's what weekly points are for.  Thank goodness it's almost the weekend. I'm in pretty good shape weekly-point wise, so I should be ok if I stick to my planned meals. I really need to get exercising again though.  I feel so terrible about that, ugh.  Hopefully tomorrow.  Goodnight all!

Wednesday 9-14-11

Here's a first in a really long time. It's almost bed time and I didn't eat all 36 points. I have 4 left but have no desire to eat them because dinner was really filling.  I got a late start on the day because I didn't get to bed til 2 a.m. (and didn't even get all of my invitations done.)  I ruined half a dozen of them by accident and ended up giving up and going to bed, but I got like 10 done and mailed this morning, so that's good.  Today was cool because I made dinner for a friend and got to meet (and hold) her adorable, teeny 2 week old baby girl.  I made her eggplant parmigiana, and to make things simple for me I prepped my own family's meal at the same time and baked it off when I got home from my visit.

When I was very pregnant with my daughter I read about this "magic" eggplant parm that was supposed to help induce labor, so I made it often even though it was hours of work, a ton of calories and definitely didn't bring on my labor.  It was delicious and worth the effort.  I have been feeling nostalgic for those days (and have been craving that delicious eggplant parm) so I decided to make it again, only lightened up; I used the same recipe for the marinara (except I only used 1 Tbsp of the extra virgin olive oil) and instead of breading and frying the eggplant I spritzed it with EVOO and roasted it in the oven.  I also subbed 2% mozzarella cheese, low fat ricotta (which I added chopped fresh Italian parsley to) and used a lot less parmesan and romano.  It was still wonderful and worth every hour of labor.

I was so busy in the kitchen all afternoon that I had to scarf lunch down quickly while standing up in there, in between roasting batches of eggplant rounds.  The only snack I had today was leftover batter from the delicious no-bake pumpkin spice cheesecake I made for my friend's family.  It was so yummy!  I'm so glad I bought double the ingredients so that I can make one for my family tomorrow.  Anyway, here is today's menu:

Breakfast (8 pts)
1/2 c. scrambled egg whites, 2 slices Oscar Meyer center-cut bacon, 2 slices Sara Lee Delightful whole wheat bread with Smart Balance Light, and 2 skim milk/sugar free hazelnut lattes.

Lunch (10 pts)
Leftover slow-cooker chile verde shredded pork roast in a flour tortilla with onions, cilantro and lime with a 1/2 c. scoop of leftover refried beans on the side. It was even better the second time around and was extra awesome in a flour tortilla!

Snack (4 pts)
A few spoonfuls of leftover no-bake pumpkin spice cheesecake batter scraped from the mixing bowl

Dinner (10 pts)
One big helping of my own lightened up version of Scalini's eggplant parmigiana and ghetto garlic bread (which was just half of a Sara Lee Delightful 80 calorie hot dog bun toasted in the toaster oven then spritzed with I Can't  Believe It's Not Butter Spray and sprinkled with garlic salt and flat-leaf Italian parsley.)  Oh, and a Diet Shasta Root Beer. Really good and really filling!

I ate 32 of my 36 points today, but it's 10 o'clock and I am still very satisfied from dinner.  That doesn't happen very often.  Maybe it'll make up for my lack of formal exercise lately...ha, or not.  Good night all!

Taco Tuesday 9-13-11

I got up early again and put a pork ribeye roast into the crock pot with 2 small cans of chile verde salsa (Herdez brand in the can) and a splash of fat free chicken broth. The house smelled delicious all day.  We had a 5 p.m. appointment with our realtor to take pics of our place for the real estate web sites, so it was another crazy busy day getting the house in order.  I can never understand how a two year old can destroy a home so quickly, but I digress.  After the realtor left and we could breathe again I went to Target for a few things and discovered they too have some awesome Halloween stuff.  I couldn't resist and got a few things for baby girl's upcoming birthday party, including a spider web cupcake/treat holder and an awesome spooky tree.  I was pretty good today, food-wise, til dinner when I decided to treat myself to one of my famous strawberry-mango margaritas.  (I earned it today, believe me!)  I ended up dipping into weeklies today, using 41 pts of 36.  Depending on how this week goes I may or may not lower my daily points target next Monday since baby girl is starting to be a lot better about eating solids and isn't nursing as frequently.  Anyway, here was today's menu.

Breakfast (11 pts)
1/2 c. scrambled egg whites, 2 links of turkey sausage, a cinnamon-raisin bagel thin topped with 1 oz of pumpkin spice cream cheese (can you tell I'm on a pumpkin kick?) and 2 skinny lattes made in my usual way.

Lunch (13 pts)
Leftover turmeric braised chicken in yogurt sauce (even better the second time around), 1 c. curry rice with celery, green onions, red peppers, golden raisins and almonds, and a cup of simple cucumber salad with yogurt-dill dressing.

Snack (0 pts)
A banana

Dinner (17 pts)
2 slow cooker chile verde pork tacos, 1/2 c. canned refried beans with a sprinkle of cheese, 1/2 oz Baked Tostitos scoops, and a big organic strawberry-mango margarita with the last ounce of my Patron Silver.

It's 11:36 and I still have dishes to wash and birthday invitations to finish making.  I was supposed to have baby girl's invitations mailed by last Friday but I have been busy, so now my goal is to have most of them mailed by tomorrow.  I have a lot of work to do.  Good night all!

Mediterranean Monday Menu 9-12-11

Today was a pretty good day!  I got up bright and early to get the Crock pot ready for a recipe a friend of a friend shared in our little "I'm not a short-order cook..." Facebook group.  Later in the morning I took the kids to a play date at a friend's house where my toddler had a blast. Then we went to a Halloween store where we picked up some stuff for baby girl's upcoming "Nightmare Before Christmas" themed birthday party and then we went to Frazier Farms next door for some vitamins and produce. We had lunch when we got home and while the kids napped I did the rest of the prep-work for dinner and got some more cleaning done.  It was a pretty productive day.  I'm also happy to say that despite having a few treats (like the delicious pumpkin spice bread with cream cheese glaze I baked last night and one of my son's Fun Size Snickers) I was able to stay within my daily points allowance today.  My weigh-in this morning went much like I expected.  I gained nearly a pound from last week's splurges, but no biggie.  I will recover from this.  It's a marathon, not a sprint. ;)  This was today's menu:


Breakfast (5 pts)
1/2 c. scrambled egg whites, 2 slices of center-cut bacon and 2 skinny lattes, each made with 1/2 c. organic skim milk, 1/2 Tbsp sugar free hazelnut creamer, coffee and Splenda.

Snack at kids' play date (6)
1 slice of pumpkin spice bread with sweet cream cheese glaze (which I baked late last night before bed), a piece of cheddar cheese, strawberry slices and grapes.

Lunch (10 pts)
A turkey & reduced fat pepper jack sandwich on Sara Lee Delightful 100% whole wheat bread with organic mixed baby greens, tomato slices, red onions, light mayo and mustard, a cup of watermelon chunks, Diet Shasta Root Beer, and for dessert another slice of pumpkin spice bread. (Sooo yummy!)

Dinner (13 pts)
Slow cooker turmeric braised chicken in yogurt sauce (de-licious!), curry rice pilaf with green onions, golden raisins, red peppers, celery & sliced almonds, and a simple cucumber salad with yogurt-dill dressing.

Dessert (2 pts)
A Fun Size Snickers bar.

Sunday 9-11-11

What an emotional day this was, especially with 9/11 coverage on all day.  I can't believe it's already been ten years.  I was supposed to go watch the Chargers game at my parents' house today with the kids, but we ended up staying at home instead since we had so much to do around the house.  Keith and I took care of business all day while taking random breaks to watch the game when we could, and we had 9/11 coverage on in the background after football.

One of my many tasks today was organizing the kids' closet and putting aside clothes that no longer fit them.  As I was transferring some already packed clothes from a big plastic bin to a space saving space bag I came across my toddler's newborn clothes and cloth diapers.  I was an absolute mess after that.  My second baby turned 11 months today and I couldn't handle that either.  I was a ball of emotions thinking about how quickly time flies and how my baby girl has only a month of infancy left.  I ended up so busy today that it was 7 before I realized I hadn't made dinner yet.  That's when the hubby suggested pizza (uh oh) and I agreed, and we had pizza for the third time this week.  Weigh in should be interesting tomorrow!

I'm baking a loaf of pumpkin bread right now for a play date we're attending in the morning and I'm doing laundry.  I still have to prep work for tomorrow's dinner since I'm filling the crock pot first thing in the morning.  I am so exhausted and cannot wait to go to bed.  This was today's menu:

My lightened up version of Jack-in-the-Box's Ultimate Breakfast sandwich plus two skinny hazelnut lattes

A turkey, pepper jack & avocado wrap with organic salad, red onions, tomatoes and spicy Ranch in a whole wheat tortilla with a side of clementines.

2 slices of large thin crust pepperoni pizza, a big organic salad (from home) with 1 Tbsp Ranch dressing, 4 pieces of boneless chicken with 1/2 a container of Kicker hot sauce, Diet Shasta Root Beer and 2 pieces of cheesy bread (not pictured.)

Well, tomorrow is Monday and not a holiday so I should be able to get back on track no problem.  I am not looking forward to my weigh in, but I did it to myself.

Slacker Saturday 9-10-11

I spent several hours at the mall today with the kids, my sister and my one-year-old niece.  We took our girls to have their portraits done and then we window shopped for a long time.  We also stopped and had lunch at a Chinese place in the mall, and since it's not a chain I wasn't able to find nutritional info on it.  I had to guess at the points, which I did by using Panda Express nutritionals since the food was comparable.  I have been doing that a lot lately, and that's not a good thing!  I am not happy with how this week has gone, food & exercise-wise.  I was doing so well and then I started to self-sabotage by not planning as well, giving in to temptations (like Pizza Hut drive-thrus, Denny's, Little Caesar's, Chinese food in the mall, etc.)  I need to snap out of it and get my head back in this.  I am slacking big time.  I can't keep using exhaustion and unforeseen events as an excuse to eat crap!  I went deeper in to "the red" today, sigh.  Anyway, this is today's menu:

Breakfast (9 pts)
1/2 c. egg whites, 2 slices center-cut bacon, 2 slices Sara Lee Delightful whole wheat toast with Smart Balance Light & 1 tsp strawberry preserves, and 2 skinny hazelnut lattes made in my usual way.

Lunch at Chinex in the mall (24 pts-ish)
Chow mein noodles, fried rice, mushroom chicken, broccoli beef, 1 cream cheese/crab stuffed rangoon and Diet Pepsi.  I actually split this plate with my son though, so I probably ate 1/2 to 2/3 of it.

No snacks today, a mistake since it had me ravenous at lunch & dinner...

Dinner (20 pts, even though I only had 3ish left, oops.) 
Chicken fajitas with onions and red/yellow/green peppers cooked in canola oil, homemade salsa & guacamole, 1 oz Baked Tostitos Scoops, a whole wheat tortilla, light sour cream, homemade refried beans with cheese mixed in and a Diet Shasta Lime-Lemon Twist.

I need to do better tomorrow.  Weigh-in is Monday and I fear it won't be pretty.  Well, baby girl just woke up crying so off I go! Goodnight all!

Friday 9-9-11

I am so drained.  I cannot wait to crawl into bed and pass out.  It has been a long, looong day.  I'm tired, I'm cranky and I miss my hubby somethin' fierce.  Yesterday's power outage really messed things up at work and he's already been working 19 hours today!  Poor dude needs sleep.  (So do I, but probably not as badly as him, so I shouldn't complain.)  I ended up grocery shopping today.  Thank goodness my parents had the day off and were able to watch the kids for me.  It pained me to re-purchase a bunch of perishable stuff I already bought 2 days ago, but what can ya do?  It's not worth the risk.  I ate some stuff for breakfast that I thought was safe (because I put them on ice yesterday) but I have been slightly nauseated all day and I can't help but wonder if maybe it wasn't so safe.  I ended up tossing that stuff too, just in case.  So this was what my menu looked like today.  I used exactly 36 of 36 WW Pts+.


My latte was much prettier til the steam melted the whipped topping. :)
Breakfast (13 pts)
1/2 c. egg whites, potato/onions/peppers and 1/2 a serving of soy chorizo scrambled together in 1 tsp canola oil and topped with Mexican blend 2% cheese and homemade salsa, with a whole wheat tortilla on the side and a ginormous, delicious pumpkin spice latte, the recipe for which I stumbled upon online.

Lunch on the run (16 pts)
A 6" personal pan pepperoni pizza from the Taco Bell/Pizza Hut Express drive-thru, with a small diet Pepsi. Not the best choice but it hit the spot and I don't regret it one bit.

Dinner (7 pts)
2 c. lean but hearty turkey-9 veggie-black bean chili (thawed from the deep freezer) with a slice of Sargento reduced fat pepper jack cheese melted on top and 7 Baked Tostitos Scoops for dipping.

And that's my 36 pts.  The chili was filling so even though I don't get dessert tonight I don't mind because I wouldn't have room for it anyway.  I hate to cut it short but I really do need some sleep.  I have another busy day tomorrow and with the hubby on-call and slammed there is a very good chance I'll be on my own again.  Good night all! What I ate...yesterday, during the blackout. 9-8-11

So yesterday was a nightmare!  We had a power outage that affected as far north as the OC and as far south as Rosarito, BC, Mexico.  We didn't have power from 3:40 in the afternoon until 1:24 this morning.  I was standing in my kitchen happily baking homemade individual graham cracker crusts for a pumpkin dessert experiment in my nice air conditioning when it suddenly went off.  Of course I Facebooked about it, as soon as my phone let me, and was surprised to learn of how widespread the outage was.  It was a bit unnerving, but I felt reassured once I learned L.A. and Riverside counties still had power. 

It was quite an adventure.  My kids weren't fans since they're so spoiled and used to air conditioning, and light.  We did have two lamps going for a couple of hours because my hubby ran some extension cords from the power generator he has in his work truck, but it wasn't much, and at once point we plugged in the tv for some news.  It was crazy seeing helicopter footage over a black San Diego.  The two small lamps were in the living and dining areas, so I had to cook dinner by candlelight and a flashlight.  My healthy dinner plans were spoiled by lack of power for the Foreman grill, and I had to make some changes.  I steamed my zucchini & squash instead of roasting them, and instead of a yummy cornbread stuffing we had plain cornbread defrosted from the deep freezer.  I took pics but they're just awful.  Because of my slight change in plans dinner ended up costing more points than anticipated, which I learned this morning when I had Internet again and tracked it.  I managed to get myself 3 Pt+ into the red, meaning I used up all of my weekly points, all of my activity points and 3 more. Booooo.  But it's ok, we were in survival mode last night, haha. ;)

Another ABC egg white omelet and my lattes.

Snack (0 pts)
Organic strawberries and fat free Reddi-Wip for dipping

Lunch (8 pts)
Leftover grilled chicken bruschetta over 1 oz of thin whole wheat spaghetti. I ate it cold and it was just as delicious!

Candlelight dinner (14 pts)
Jack Daniels Honey Dijon pork cutlet with apple-onion topping (pan fried instead of grilled, boooo), a low fat cornbread muffin thawed from a ziploc bag in the deep freezer, steamed zucchini and yellow squash and a Diet Shasta Root Beer.

Candlelight dessert (6 pts)
No-bake pumpkin cheesecake experiment in a half-baked graham cracker crust. (The crust was a nontraditional one so I didn't hesitate to eat it later.) The cheesecake part wasn't quite set because it never got cold enough, but at least it was still yummy. It's good to know that I got the flavors right at least.

After we had dinner we stopped running the power from the truck and used some candles, which was scary because our toddler wanted to to try to climb up and get them.  For peace of mind we blew them out and used flashlights.  It was hot and humid in the house, especially after I cooked, so we took advantage of the cooler air outside and took the kids for a little walk in our neighborhood.  Most of our neighbors were walking around too.  Our toddler was stoked to see all of the "shining stars"; we have so much light pollution out here that he's never seen the sky like that before.  It was kinda cool.  The downside to this outage is that I just went grocery shopping Tuesday and have to toss a lot of our brand new food.  That hurts.  So the kids and I have to go out and re-purchase stuff in a little bit. Happy Hump Day Menu 9-7-11

I spent several hours in the kitchen today making & jarring salsas, bruschetta, baby food that my picky daughter will actually eat, prepping dinner ahead of time, washing up all the dishes I dirtied, etc.  It was nice though.  I love being in my kitchen.  Today was a pretty quiet day.  The kids and I stayed home all day in our nice air conditioning.  From what I understand it broke 100 degrees in some parts around here, yuck!  Well, the hubs is on-call and still at work, so I better wrap this up quickly and get back to my babies.  They still need baths and all that.  This was today's delicious menu:

Breakfast (12 pts)
ABC egg white omelet, which consists of 1/2 c. carton egg whites, 2 oz of avocado slices, 2 slices of center-cut bacon, reduced fat cheddar cheese, homemade salsa and a dollop of light sour cream.  I also had my usual skim milk/sugar free hazelnut lattes.

Lunch (8 pts)
A very light tuna salad sandwich made with 2 oz chunk light tuna, chopped romaine, tomatoes & red onions, 1 Tbsp light mayo and 2 slices of Sara Lee Delightful whole wheat bread, and for my sinful side a 1 oz portion of the sweet & spicy Hawaiian kettle chips from yesterday. And some Diet Shasta Root Beer. Why Shasta? Because it's made with Splenda and much cheaper than Hansen's.

Random (1 pt)
A bite of my kid's shortbread cookie. I couldn't help it, haha.

Dinner (10 pts)
Grilled bruschetta chicken served over 1 oz of thin organic whole wheat spaghetti that was tossed with 1 tsp of garlic infused oil, salt & pepper, and an organic salad with 1 Tbsp ranch dressing (which I also cracked pepper over because man, I was craving pepper.)  I also drank water, not pictured.

Dessert (5 pts and faaaabulous!) 
Something I like to call a Hawaiian Dream Sundae, my own delicious creation.  First I cut fresh pineapple into chunks and grill them. Then I put them in a bowl and top them with a 67 g (1/2 c.) scoop of fat free vanilla frozen yogurt, 2 Tbsp of toasted, flaked coconut (the sweetened kind), and 7 g of chopped, roasted macadamia nuts. Yum yum yum, heaven in a bowl I tell ya.

And that was my day in food. I used exactly 36 of my 36 pts and am completely satisfied.  I didn't do a formal workout today, but I did burn a few calories dancing to Yo Gabba Gabba with my babies after dinner.  My little boy can get down!  My funny little girl just sat on her bum and scooted herself in circles while clapping for her brother and I.  Haha, well goodnight friends & family!  "Talk" to you tomorrow!

Tropical Tuesday Menu 9-6-11

Holy moly it was hot today---and humid!  SO humid!  It reminded me of Hawaii, so I craved Hawaiian food from the start.  I decided to try an experiment in the crock pot and man was it a success. I love when that happens. Today was pretty chill.  The kids and I hit up two stores but otherwise stayed inside with our air conditioning.  I didn't get a whole lot done today, just random cleaning and taking care of the kiddos.  So anyway, here is what my menu looked like today:

Breakfast (10 pts)
My lightened up version of a Jack-in-the-Box Ultimate Breakfast Sandwich, 1 1/2 c. fresh organic strawberries and 2 lattes each made with 1/2 c. skim organic milk, 1/2 Tbsp sugar free hazelnut creamer and Splenda.

Lunch (9 pts)
A big bowl of leftover albondigas (thawed from the deep freezer.)

Dinner (18 pts) 
Slow-cooker Hawaiian style chicken (with onions, garlic, pineapple and mandarins in a rich sauce), shredded and placed on a King's Hawaiian sandwich bun and topped with a sweet,  homemade Hawaiian style coleslaw (SO refreshing) and served with a 1 oz side of Hawaiian style sweet & spicy BBQ kettle chips. And to drink, a Diet Shasta Lemon Lime Twist. I was supposed to make homemade sweet & spicy chipotle sweet potato fries with this but there was NO way I was about to run the oven today, so I ran to the store for some chips instead. Please excuse the sloppy picture; this was a delicious, but messy meal.

I ended up using 37/36 points today, so I now have only one weekly point to last until Sunday, but at least it was worth it this time!  My menu today did not disappoint. I feel like I'm back on track.

Labor Day Menu 9-5-11

The hubby and I were busy today.  Cox came by in the morning and fixed our Internet and then we dropped the kiddos off with my parents for most of the day.  We had home improvement projects to work on.  Before we got started we house hunted for a little while, looking at quite a few properties, and then went to Home Depot.  We were out for a while and got hungry, and somehow ended up at Denny's.  My Fit Slam meal was only 10 WW pts but the hubby wanted to split some strawberry cream cheese pancake puppies and I totally went for it, and WOW, they were yummy but I'm not so sure they were worth all of those points (9 pts for 3 little puppies!)  We worked on the house all day and got some painting done and were exhausted and famished by the end of it.  We picked up the kids and on the drive home we decided to pick up a Hot & Ready pizza from Little Caesar's. OUCH!  Normally I'd eat a huge salad and only have a couple slices of pizza, but noooo, I was too hungry/tired/impatient and I just dug in mindlessly.  I was a very, very bad girl today.  I didn't want to post because it's sort of embarrassing, but since I promised I'd share "the good, bad and ugly" here it is, today's ridiculous 83 point (holy cow, I know) menu: 

Breakfast (11 pts)
Egg white scramble with 1/2 of a leftover hot Italian lean turkey sausage, onions, tri-color peppers, EVOO, Sargento reduced fat pepper jack cheese, Delightful whole wheat toast with Smart Balance Light and 2 skim milk lattes made in my usual way.

Lunch at Denny's (22 pts)
3 strawberry pancake puppies with cream cheese frosting (not pictured), 2 coffees with creamer and Splenda and a Fit Slam, which is 2 egg whites scrambled with tomatoes & spinach, 2 slices of turkey bacon, an English muffin (to which I added strawberry jam) and seasonal fruit.

Dinner from Little Caesars (41 pts!!! YIKES.)
4 slices of pepperoni pizza, 4 pieces of crazy bread and Diet Shasta root beer. Can we say "regret" and "not worth it"?! Oh well, moving on!

Dessert (9 pts)
Reduced guilt brownie topped with 67 g (1/2 c.) Dreyer's yogurt blends fat free vanilla ice cream, 5 g of chocolate chips, 5 g of walnuts and a glass of organic skim milk. Really unnecessary but I was having a killer chocolate craving.  Hmmm...

I am really disappointed that I ate such a stupid amount of points today when the food wasn't even all that great, but all I can do is move on and make sure not to have a repeat any time soon.  I need to plan my weekly menu tomorrow and stick to it.  I only have 2 more weekly points remaining to last until Sunday so I need to be very careful the rest of the week.  On the bright side, today wasn't all bad.  I posted a 0.2 lb gain since Friday which bummed me out this morning, but then on a whim I decided to gauge how close I am to my goal size by trying on a pair of size 5 pre-pregnancy jeans.  I wanted to see how far up I could get them compared to the last time I tried.  Much to my surprise they actually FIT!  That made me super happy since I haven't fit into those jeans in YEARS and today they fit well enough to wear out in public.  That's why I know I'll get right back on track tomorrow.  It's these small victories that make it all worthwhile.  So that's my bit of happy news to soften the blow of a rough, off-track day.  Goodnight all.  I'll be back tomorrow with a much better, home-cooked menu, I promise.

Sunday 9-4-11

I'm going to try to make this quick because my Internet is acting up and who knows how long I have before it goes away again.  We have a Cox guy coming out tomorrow morning and I'm hoping the problem is resolved.  Today was not as relaxing as I'd hoped it would be.  There was a lot of running around, working on home projects, cleaning etc.  I went to the grocery store on an empty stomach which was a mistake because I bought deli food (dangerous since I had to guess at points again.)  At least I squeezed in a workout between all of the madness, while the kids napped.  I resorted to quick, not-so-healthy meals today, but I managed not to go too far over my points target, so that's good.  This was today's menu:

Breakfast (11 pts)
California burrito made with 2 oz leftover Trader Joe's carne asada, 1 tsp canola oil, 1/2 c. diced potatoes, peppers and onions, 2 Tbsp reduced fat Mexican blend cheese, homemade salsa and a whole wheat tortilla.  And 2 lattes made in the usual way, each with 1/2 c. organic skim milk, 1/2 Tbsp sugar free hazelnut creamer, coffee and Splenda.

Lunch (13 pts-ish)
4.5 oz of rosemary & garlic rotisserie chicken (breast only), 1/2 c. deli garlic mashed potatoes (ok, but not great) and about a cup of fresh steamed veggie medley.


Dinner (13 pts)
Jennie-O Lean Hot Italian turkey sausage in an 80 calorie Sara Lee Delightful wheat hot dog bun and topped with 1 slice of Sargento reduced fat pepper jack cheese and onions and tri-color peppers sauteed in 1 tsp of extra virgin olive oil, and a 1 oz side of Baked! Tostitos scoops with a homemade spicy, reduced fat queso dip (that tastes a lot better than it looks, really.)

Snack/Dessert (0 pts)
A huge bowl of watermelon chunks, shared with my little monkey man.

My official weigh in is tomorrow morning, so hopefully my weekend splurges didn't mess up the reaching of my mini-goal. I used all but 14 of my weekly points (if my tracking was anything close to accurate) but I didn't dip into my activity points at all, so we shall see. Until tomorrow. Goodnight all!

Princess Party Saturday 9-3-11


Today was amazing! My niece's 1st birthday party was just incredible. There were princesses everywhere and it was just so much fun! My family is pooped! I'm the only one still awake. I took 250 pictures to document it, but sadly my camera died just after the pinata, so I didn't get to capture the gift opening. I'm still happy with the pics though. Food-wise I didn't do great, but I didn't do as badly as I could have. But then again I had to guess at the WW points values, so who really knows.  In retrospect I could have made some better choices, but at least I had plenty of weekly points to dip into, a good thing since I used about 28!  It's not the end of the world. I tracked it all and now I'm moving on. This is what I ate today:

Breakfast (9 pts)
1/2 c. egg whites, 2 slices of center cut bacon, 2 slices of Sara Lee Delightful whole wheat toast with Smart Balance Light, and 2 lattes, each made with 1/2 c. organic skim milk, 1/2 Tbsp sugar free hazelnut creamer and Splenda.

Lunch (I'm pretty sure I overestimated, but I'm counting it as 28 pts in case) 
1 chicken salad wrap, a salad of mixed greens, balsamic vinaigrette, golden raisins, gorgonzola cheese (?) and I think pecans. Pineapple, canteloupe, honeydew melon and strawberries. 2 cheddar cheese cubes, 1 cube of pepper jack, 1 cube of monterrey jack, and a small piece of baked brie with cranberries.

Dessert (approximately 9 pts) 
1 red velvet cupcake and a scoop of chocolate chip ice cream

Dessert #2 later on... (around 5 pts) 
1 vanilla cupcake with strawberry frosting. (I had to see what all the fuss was about!)

Random (I guessed 4 pts)
Torn pieces from the center of a small wheat roll that I hollowed out for J and a bite of his shortbread Belle cookie

Dinner (15 pts-ish)
Pesto chicken breast (brought home from the party) & organic salad wrapped in a whole wheat tortilla and topped with shaved parmesan, romano and asiago, 6 crackers, 1 oz of goat cheese with sesame seeds, herbs and sundried tomatoes, and 4 slices of Italian salami. And a Diet Shasta Lime-Lemon soda to wash down the vitamins I forgot to bring to the party.

No exercise today, again, but tomorrow is a brand new day! Keith and I intend to work on the house and kick back at home.  We need a low-key day of rest after today!  I'm going to try to stick to my daily points target tomorrow---no weeklies---since today was so splurgtastic.  Goodnight everyone!

Mini goal reached! Woot!

Good morning all!  I just wanted to make a quick post to update about my mini-goal weight check.  I weighed in on my Wii Fit board and sure enough I just barely hit my mini-goal!  I weighed in at exactly 129.9 lbs.  Hello 120s!  My official weigh in day is Monday morning, but this was really good to know.  It should help motivate me to stay on track at my niece's birthday party today.  That's not to say that I won't indulge a little, but I won't let myself go too crazy.  So that's my quick update!  I'll be back with what I ate this evening.

Friday 9-2-11

Today was a really good day! Baby girl slept 12 hours in a row last night, so I was well rested when I got up around 7. When I got up I had breakfast and coffee and then finished organizing my donation stuff into boxes to put outside. I also met up with the realtor to hand over some keys. (Our home is officially on the market! Fingers crossed we sell it quickly!) In other news, my niece's huge princess party is tomorrow and I have been excited for it all day. I dedicated a song to her on SingSnap today. I sang a Snow White song since she loves Snow White, and then I worked on some super cute tutu sets.

After lunch I ran some errands with the kids. We went to Babies R Us, Target, Michael's and then to a few stores in the Bressi Ranch area, including Postal Annex and Trader Joe's. I never worked out today but I don't feel too bad since it's not like I was totally sedentary. Right now I am kicking back with a delicious, fruity margarita before I bathe the kids and put them to bed. I'm hoping I have a good weigh-in tomorrow morning. Hmm, maybe these margaritas aren't such a good idea after all. Oops! Oh well, if it doesn't go well tomorrow it's ok because my official weigh in isn't until Monday anyway. I'd just love to meet my mini-goal of entering the 120's by tomorrow.  So anyway, this is what my menu looked like today:

Breakfast (9 pts)

Medium organic peach and 1 1/2 light string cheese. (The 1/2 is because I helped J finish his too...oops.)

Dinner (17 pts)
4 oz of carne asada (weight before grilling), 1/2 c. of black beans topped with pico de gallo, mixed organic baby greens topped with 1 Tbsp of Hidden Valley Spicy Ranch, homemade roasted salsa and a flour tortilla. (I treated myself to a white flour tortilla for a nice change.) Oh, and two delicious homemade organic skinny strawberry mango margaritas (which I'm still workin on.) Yum yum yum!

Thursday 9-1-11

Today was pretty rough.  Baby girl is sick and kept me up all night with her screaming and crying.  She was inconsolable so I spent most of last night half-asleep rocking and shushing her.  I kept telling myself "It's ok, you can sleep in tomorrow."  Of course both kids decided to wake up at 6 a.m. this morning, so I was tired all day.  It was definitely a 3 latte kind of morning, go- go-go right from the start.  I rushed through breakfast and shared with the hubby, so it didn't look as appetizing as it tasted. Then I cleaned, did laundry and continued purging my closet and drawers of stuff I no longer need.  It felt good to finally let go of some stuff.  Another productive day.  I also sneaked a little peak at my not-so-accurate bathroom scale this morning and was happy with what I saw, but I don't want to count my chickens before they hatch; I will be weighing in for my "mini-goal" weight check Saturday morning, but I still need to get through tomorrow.  I made a menu change for the hubs and a craving he's had for a while, and it's not really WW-friendly.  Anyway, this is what today's yummy menu looked like:

Breakfast (10 pts)
Tomato-basil egg white omelet with neufchatel & reduced fat feta, 2 links of turkey sausage and 3 lattes, each made with 1/3 c. skim milk + coffee + 1 tsp sugar free hazelnut creamer + 1 packet of Splenda.

Snack (0 pts)
sliced organic pink lady apple

Lunch (11 pts)
Leftover chicken marsala, 1 oz angel hair pasta tossed with garlic and 1 tsp Smart Balance light, and garlic roasted asparagus. Diet Shasta Root Beer.

Snack (7 pts)
40 g garlic naan, 1/2 oz Chevrai soft unripened roasted garlic goat cheese and 1 oz dry Italian salami


Dinner (13 pts)
Baked lemon & herb chicken, 1/2 serving wild rice pilaf and spinach salad with mushrooms, balsamic vinaigrette and crumbled goat cheese, and 4 fl oz of moscato, my favorite kind of wine.

Dessert (0 pts)
1 1/2 c. mixed organic berries topped with fat free Reddi-Wip

I dipped into my weekly points this evening because of an unplanned pre-dinner snack but I'm still in good shape for the weekend.  I used 41 points+. Not too bad.  Well, I am really exhausted and need to go to sleep.  Good night friends. Until tomorrow...
